Course Description/Information

Feeding the estimated 9.7 billion people expected to inhabit planet Earth by 2050 is a moral obligation and burden we share as a global society. Critical to this goal is to build student capacities to always address food security-access by all people to enough food for a health, active life (United States Department of Agriculture) and become culturally competent global citizens. Argentina has a strong and culturally connected agriculture sector that faces tough challenges of feeding its country while maintaining and restoring its natural resources. Additionally, Argentina is an important global exporter of grains, beans, and animal products, however, domestically, food insecurity is on the rise. Argentina is a living laboratory in which we teach students using experiential learning techniques to understand food security and natural resource use and its implications in global trade and political dynamics.

Course Goal

Foster and appreciation for the interconnectedness of agriculture and natural resources and their importance to indigenous, local, regional, and global economies.

Student Learning Outcomes/Objectives:
